About the Position

As our Sous Chef, you will lead the culinary vision and day-to-day operations of our retail outlets, including our restaurant The Barre, our Foyer Bars across the Theatres building and Hamer Hall, and The AMV Lounge.

Working alongside the Executive Chef, you will shape menu concepts, elevate presentation standards, and bring forward‑thinking culinary ideas to life - all while contributing to a seamless, exceptional customer experience.

You will also play a key role in operational efficiency, cost and stock control, labour management, and continuous improvement initiatives across our kitchens.

Full time ongoing position - 38 hours per week. Band 3.3 $91,970.00 p.a. plus superannuation.

 

About You

You’re a strategic and hands‑on culinary leader who thrives in dynamic, creative environments. You bring:

  • Minimum 3 years experience in a senior kitchen role
  • Proven leadership of a team in a fast‑paced kitchen or multi‑outlet environment
  • Strong menu development skills with a flair for innovation
  • Solid financial acumen, including cost control and stock management
  • Experience coaching and developing kitchen teams
  • Excellent communication and stakeholder engagement skills
  • Food Safety Supervisor Certification
  • Relevant commercial cookery qualifications
  • Adaptability, resilience and a passion for continuous improvement

 

About the Team

The Kitchen Brigade is responsible for the food delivery within Arts Centre Melbourne which contributes as a major driver of revenue.

The kitchen delivers a culinary experience on a multi-platform stage, catering for the culinary novice, the theatre-going crowds, world stage performers and a vast array of local and international dignitaries.

At Arts Centre Melbourne (ACM), we employ the HumanForce system. HumanForce uses Facial Recognition technology to record clock on and off times. This technology operates in strict privacy mode, meaning that images are not stored. The use of this technology is necessary for ACM to perform its roster, time and attendance (RTA) functions accurately and efficiently. Therefore, all new staff in the Production, Visitor Experience, Ticketing and Hospitality/Kitchen Teams will be required to use it unless otherwise agreed.
